Spinach omelette – a tasty dinner, practical and healthy!

Recipe for 4 persons:
8 eggs
100g spinach
1dl light milk or simples soy milk
10g vegetal margarine or olive oil
Salt and pepper to taste
Receita para 4 pessoas:

 

Spinach should be cut fine.
Beat the eggs, put salt and pepper and add milk.
In a frying pan with a small amount of heated olive oil, place the spinach and the eggs. Let it cook on low heat, when the the center of the omelette gets medium liquid, fold the end of one side and the opposite one over it, to form a roll.
Serve with a lettuce salad, tomatoes or rocket salad.
