This vegetable is very rich in vitamin C, even exceeding that concentration in oranges, with almost 120 mg of this vitamin by each cup of peppers.
 

Also rich in water, fibres, vitamin A and potassium, peppers may be eaten raw, in salads, although some people find difficulties in digesting it when not cooked.
It is delicious roasted for accompanying many sorts of dishes and to mix in green salads. For having a snack with friends, you may use pepper strips to deep in humus, cream-cheese or sauces with greek yoghurt.
