Asparagus salad, light bacon and quail eggs with avocado and coriander sauce

Asparagus salad, light bacon and quail eggs with avocado and coriander sauce.

Boil the asparagus for around 5 minutes.
When cooked, place them in a dish with some ice cubes, so the thermic shock will prevent the asparagus to get soft.
Put 2 lean bacon slices in a frying-pan, do not add any kind of grease, and fry until the bacon fat melts.
In another anti-adherent pan fry 3 quail eggs, not adding as well any kind of grease.
Lastly place the bacon slices over the asparagus and on top of all the quail eggs.
The avocado sauce is nothing more than a small avocado, a handful of coriander, ground black-pepper to your taste, some very fresh water with a few lemon drops, and crush all this in a shredder until you get the right sauce consistency.
Now you just have to pour the sauce over the previous preparation and… ENJOY IT!
