It's a delicious way of combining the egg and cheese proteins with the vitamins and minerals from spinach. And it is vey easy to prepare.
 

For 4 persons:
8 eggs
100 g spinach
1 dl light milk or simple soy milk
10 g extra-virgin olive oil
1 tablespoon light cottage cheese (35 calories)
Salt and pepper to taste
