Christmas does not cease to be tasty if we skip those greasy and sugary french toasts, "filhoses" and other traditional Christmas desserts in Portugal.
This year choose only to cook spoon sweets, such as rice pudding or sweet vermicelli, cream puffs, crème brulée and creams. The secret remains in the ingredients and portions. I am not asking you to make desserts with skim milk, because not always the culinary result is the same of tradition, but half and half milk does exactly the same as whole milk… it has all the taste, turns dishes creamy as well, but it has only half thef fat.

Concerning sugar, recipes have a tendency to over do it in quantity, so, the ideal is to forget the indicated measures and to slowly add sugar and tasting until you get a pleasant flavour. In this case you also may save half the sugar you would normally use. Referring to crème-brulée, you can skip the burnt sugar on top and powder with cinnamon, the same way you do with rice pudding and sweet vermicelli. And for farófias, change the caloric yemas to light custard milk.
